IMG_4580I've been making noodles and thinking about 'ca-noodling' and wondering if that's even a word and if it relates to noodles at all, so I checked. It doesn't. The urban dictionary says, "snuggling, kissing, heavy petting, making out." Maybe I should do a post about that instead. Oh la la!!IMG_4588  When I had Charlie last November, my friend Nicole brought me over this delicious chicken noodle soup with homemade noodles. Let me say it again: Homemade Noodles. It was so, so good. I actually had it last Fall at a Halloween Party and I'm going to admit it: I had 3 bowls. Yes, it's good. I cut the noodles in this soup  into strips but I wanted to mix it up a little and see if these little knots would hold up; plus I thought the kids might get a kick out of them (and they totally did.) And the knots? They held their shape:IMG_4609 The kids loved fishing them out of the soup and eating it plain. I should have just made noodles. Anyway, I made Nicole's recipe and I have to say it wasn't quite as good as hers. Probably because I didn't follow her directions. I used chicken bouillon instead of boiling the chicken which I think was my downfall. I'm going to try it again making it her way. IMG_4614Here is the recipe:

 Noodles:

2 eggs beaten slightly

3 TB milk

1 tsp salt

flour – enough to make a stiff dough about 1-2 cups.  

I usually end up mixing the last bit in with my hands.

Roll out dough and cut into strips with a pizza slicer.  Let dry.  I usually roll out the noodles around noon if I'm planning on making them for dinner.

Soup: official recipe

1 whole chicken in water with basil, salt and pepper to taste.

Boil for 1 1/2 hours

Remove chicken from bone and strain broth.  You want the pot about 2/3 full with broth.

Add 6-7 carrots

3-4 stalks of celery

add 1 can cream of chicken

add noodles – cook for 12-15  minutes

add chicken at the end

That said you can also use chicken broth or canned chicken and make the broth out of boullion.

I am busy making (or trying to make) fabric Easter baskets for the children. I have this great idea in my head of how I want them to be but not sure it's going to work out (we always have last years baskets to fall back on) so I'll let you know how it works. We've been dyeing eggs and will share tomorrow.

    Looks delicious! I’ve got tp try the bow tyes. I’ll bet the quarts of bottled chicken you did last year would work well for this recipe.

    YUM! I always enjoy your recipes. Just so you know, your Oreo pops are a favorite around here and my daughter’s girl scout troop “expect” them each year for Christmas. This year we were so busy that we almost did not make them.. and the troop mom “warned” 🙂 me against not making them! hee hee… they were made just for the troop and they were all happy! phew! you can’t mess with the girl scouts! 😉

    hmmm… the can of cream of chilen soup is interesting. I’ll have to try that. Other wise, that looks like the recipe I used. Yes, The homemade broth is the difference I would say. It really add something (fat!) taste wise.

    The noodles are fabulous with knots in them–I am surprised they stayed in during cooking, but it makes sense. I am going to try knotty noodles next time I make chix noodle soup w/homemade noodles! I add white wine to my soup, too.

    Looks amazing! Do you keep adding water to the boiling chicken so that it stays covered in liquid the whole 1.5 hours? Do you keep a lid on it while boiling? I’ve never made my own chicken broth before… Thanks!
