IMG_2837 I made these chocolate oatmeal bars for an event a few weeks ago. I got the recipe from a friend when we lived in Boston. I think they may originally hail from Betty Crocker…but I have the recipe hand written in an old recipe book that's 11+ years old, so one can't be too sure. Anyway- I don't make these that often and I always wonder why because they are so flipping good. To good to horde, that's for sure, soooo…I'm sharing with you.

Chocolate Oatmeal Bars

Mix:
1 C Brown Sugar
1 C Granulated Sugar
1 C Butter
2 eggs

Then add:
2 C Flour
3 C Oatmeal
1 tsp Baking Soda

Press 1/2- 3/4 of the mixture into the bottom of a 9" x 13" pan.

Over low heat, in a small saucepan melt:
6 oz chocolate chips
1/2 C Butter
1 tsp. Vanilla
1 can sweetened condensed milk

Pour the chocolate mixture into the 9" x 13" pan over the oatmeal mixture. Sprinkle the remaining oat mixture over the top. Bake @ 350 degrees for 30 minutes. Allow to cool (at least an hour) before cutting.

To get these to turn out just right, I line the bottom of the pan with parchment paper so they are easier to slide out (I cut them once they are out of the pan and on a cutting board.) Also, if you have them time, I would let them sit overnight. It seems like just an hour or two still leaves them gooey (not a bad thing) but the extra time allows them to set a bit more.

On a side note, I've upgraded on typepad and am now able to respond to your comments in the comments section (go there and you can see what I'm talking about) I think I got everyone who had a question in quilting post. If not, just email me.

AND can you believe that Tuesday is the first day of FALL??? Huzzah! I love Fall!!

Thanks for all the kind well-wishes. I'm doing about the same, but it means a lot to know you are here.

xoxo

YUMMY! I think I’ll make these today. Does it matter if you use quick oats or Old-fashion oats?

I don’t think it matters. I used old-fashion oats but I’m sure either will work.

Hi Morgan. The bars look absolutely sinfully delicious. In the crust recipe, do you use softened butter or melted butter? I will definitely be making these. Thanks for sharing,

I just use regular unsalted butter straight out of the fridge. The butter in the chocolate mixture gets melted (yikes- that’s a lot of butter!!)

Made them Morgan…those are dangerous! I tell my kids they are called “My Mom Loves Me Bars”, or “My Mom Is The Best Mom In The World Bars”. I did use milk chocolate chips (all I had on hand) and I think that they would have been better with the semi sweet chips. Oh, and I forgot the vanilla…oy. But hey, they were still gooey and good. Good thing my customers aren’t too picky! 🙂
