I was so thrilled when Holly asked me to be part of her Blog-able Feast (although I’m quite certain I am the only non-professional-quilter! I’m trying hard not to be intimidated!!) We are starting with desserts, and I’m happy to share one of my favorite Fall recipes. I started making this recipe about 5 years and originally found it on Allrecipes. Get ready, it’s going to make your home smell heavenly!

6 Cups grated carrots
1 Cup Brown Sugar
1 Cup Raisins
4 Eggs
1 1/2 Cups granulated sugar
1 Cup Vegetable Oil
2 tsp. Vanilla
1 Cup crushed pineapple (well drained)
3 Cups Flour
1 1/2 tsp Baking soda
1 tsp Salt
4 tsp Cinnamon (or apple pie spice)
1-2 Cups chopped walnuts*

Directions:
1) Mix carrots and brown sugar in a medium bowl and let sit 1 hour. Stir in raisins.
2) Pre-heat oven to 350 and grease & flour (2) 10" pans**.
3) In a large bowl, beat eggs until light. Gradually add in the sugar, oil & vanilla. Stir in the pineapple.
4) In a separate bowl, combine the flour, baking soda, salt & cinnamon. Add to wet mixture until absorbed. Stir in the carrot/raisin mixture.
5) Pour into prepared pans & bake for 45-50 minutes or until cake tester indicates done. Cool for 10 minutes & remove from pan. Allow to cool before frosting.

Cream Cheese Frosting
(2) 8 oz packages of cream cheese
1/2 Cup butter softened
2 Cups confectioners sugar
1 tsp vanilla extract

Directions
In a mixer or bowl, cream the cream cheese & butter until smooth. Add the vanilla and gradually add in the confectioners sugar.

*I omit the walnuts inside of the cake and just use them to coat the sides. If you are a nut lover, you can add 1 cup to the cake and have 1 1/2 cups on had for decoration.
**I made this cake using (3) 10" pans so I’d have more layers, if you do this, just reduce the cooking time.

I think that Parsley makes the most adorable little carrot tops, so if your feeling adventurous, pipe on some carrots and throw on some parsley!

So aside from sharing a recipe, I am supposed to share something that I’m working on. Unfortunately, all I’ve been working on are these Halloween Banners (which my blog readers recently read about).

    Love the banner and wish that I had a piece of your cake and a big cup of coffee.
    I love Fall because its the beginning of the rainy season. We have been without rain for 5 months. Now talk to me again in Febuary and I might not be so tickled about the rainy season. But for now I can hardly wait. I also love the colors and the smells of the season. Big pots of soup on the back of the stove. Yum.

    My favorite thing about fall is being inside when it’s raining outside and being bundled up in a nice sweater drinking hot apple cider. Today it finally cooled down (and actually started to rain)…bring on fall.

    Cute Banner! Love IT … my favorite thing about fall…. well after 100+ degree weather most of the summer, who wouldn’t love fall. But truly it is jackets… I have a thing for jackets. Most women it is shoes, but me jackets and in the fall, I get to wear them! I can’t wait!

    my favorite thing about fall? hmm there are so many. My birthday is in october and costume parties were always how I celebrated. Getting dressed up for Halloween is what I look forward to.

    My favorite part of fall: The pumpkin patch! I love spending time looking for the perfect pumpkin. In addition to that, I love the hay ride and the apple cider that comes along with the patch.

    Mmmmm….. I live in Southeast Georgia so at times during the summer it’s just so, so hot……… I love to walk out of my door in the morning to feel a slight coolness in the air…… then to see the sunsets change as the world adds pinks and blues to it……. then the smell of wood burning and smoke drifting from fireplaces! It’s the sign I look for to know that Fall has arrived!
    Halloween costume planning, pumpkin buying and the beginnings of Christmas shopping peeking through. Crunchy leaves as well…… fun!

    I would love to say my favorite thing about fall is a change in weather… but since I live in central FL, we miss out on that. Sooo, I would have to say my most favorite thing about fall is halloween! Along with that would be the pumpkin patches, the craft shows & festivals that take place around this time of year… the apple cider, sweet potato casseroles… the shift in daylight.. the smells… ok.. so my list is getting long.. but our un-fall fall in florida is my FAVORITE season!! 🙂

    and my favorite things about fall. opening the windows. nature walks and hearing the leaves crunch under my feet. snuggling under the quilt that my grammy made for me. hot drinks. carmel apples. fall parties. football season, and seeing how excited my husband gets over it. the pumpkin festival. okay, i’ll stop there. i could go on and on and on.

    I am starving this morning and seeing the picture of that carrot cake is making my mouth drool. Oh it looks absolutely wonderful and I will definitely be making that this weekend. Fall is my favorite time of the year–crisp falling leaves from the trees, cool mornings and bright sunny afternoons, cool air coming through open windows and seeing all the little ones treat-or-tricking.

    Oooo…I love carrot cake! This recipe looks great.
    I grew up in California, but now I live in Massachusetts so there are ton of things I love about fall…clean, crisp air…apple pickng…the smell of apple pies baking in the oven…Halloween candy in the stores…the smell of a fire in a fire place…pumpkins on door steps…I could go on and on!
    I was wondering…will you be making banners like this one for Christmas? I would love to buy one if you do!

    Morgan I am so happy that cake made it to my house, it was delicious! Helen begged me to let her have some after she ate her breakfast. So what a good mother I am to let her have cake after breakfast before school. But it has carrots in it so it’s healthy brain food to help her get through school right?     My favorite thing about fall (when and if it reaches us in FL) is that it isn’t a heat index of 112, and I get to open all of the windows in the house and let the wonderful smell, sounds and breeze in. It has rained all week here and I opened the house up and now my husband is wondering if he will ever feel the AC again! However the downside is that a nice breeze comes through and you find yourself staring out the window instead of sewing before the kids come home…

    pretty much am all about fall.. the crisp air in the northeast, the trees changing practically overnight.. and the crunchy noises you hear as the kids trample over them on halloween! and of course the decorating begins!!!
