• IMG_3231 A few weeks ago I decided to crack open some cookbooks in hopes of finding a few new go-to recipes. I found this recipe which sounded really intriguing, easy, quick & delicious so we gave it a whirl. First off, this recipe smells like heaven. I've never made anything like it before. When I pulled my turmeric out of the cabinet, I realized it expired in either 2003 or 2008 (yikes) it was kind of rubbed off so I wasn't sure, either way, I tossed it and started with a fresh jar. The combination of the turmeric, ginger, cinnamon & chili powder is really what makes this great. As far as the taste, it was good, but when I made it again this past Sunday- I doubled the spices (with the exception of the chili powder) just to give it that extra kick and I think I liked it better that way. 

     On a completely unrelated note- it only occurred to me recently, that chickpeas and garbanzo beans are pretty much the exact same thing. While I am a huge fan of hummus, chickpeas in their natural form don't do a whole lot for me– although I did find a good looking recipe today for chickpeas which I am excited to try out. Will keep you posted. So I may omit those in the future. This is a one pot dish (heaven) and is ready in about 30 minutes. Also, if you are vegetarian, it'd still be delish if you wanted to omit the chicken. We used chicken breasts instead of the thighs and it seemed like 30 minutes was too long; it made the chicken a bit tough so I need to find a way to work around that. The recipe says it makes (4) servings, but I felt like it made a lot more than that. The couscous is completely separate from this recipe, so make sure you have some on hand.

    Start by cutting up your veggies. Set aside. IMG_3171 Next, you'll throw everything into the pot. Start with the chicken: IMG_3174 then add the veggies (except the zucchini- that goes in later)  IMG_3180 you'll also add the chickpeas and then the spices: IMG_3184 Aren't they gorgeous? It's turmeric, cinnamon, ginger, chili powder and salt & pepper. Give it a good stir: IMG_3194 Cook it for 15 minutes, then add the zucchini: IMG_3197Then cook for another 15 mintues.

    Here's the recipe:

    Moroccan Chicken Couscous

    8 bone-in skinless chicken thighs (we used 3 breasts cut into chunks)

    3 carrots, cut into 1 1/2 inch chunks

    3 onions, thinly sliced

    1 (14.5 oz)  can whole tomatoes, drained

    1 (15.5 oz) can chickpeas, drained & rinsed

    1 3/4 C chicken broth

    1/2 tsp ground ginger

    1/4 tsp ground turmeric

    1/4 tsp ground cinnamon

    1/8 tsp chili powder

    1 tsp salt

    1/8 tsp pepper

    2 zucchini (about 1 lb) halved crosswise and quartered lengthwise

    Couscous, for serving.

    Directions:
    In a Dutch oven (or other 5-qt pot with a tight fitting lid), combine the chicken, carrots, onions, tomatoes, chickpeas, stock, 3/4 C water, the ginger, turmeric, cinnamon, chili powder, salt & pepper. Break up the tomatoes with a spoon.

    Bring to a simmer over medium heat. Cover, and cook for 15 minutes. Add the zucchini, and cook until the chicken is cooked through, yet still tender, about 15 minutes more.

    Divide the couscous evenly among 4 bowls. Spoon the chicken, vegetables, and broth on top. Serve immediately.

    *****here's a helpful chicken tip from blog-reader LeAnne:*****

    You are right to assume you need to cut back on the cooking time for breast meat over dark meat in poultry.  They actually do cook up differently.  I won't bore you with my Animal Science skills, but it boils down to long acting muscle fibers (dark) and short acting muscle fibers (white).  Generally, you'll notice that poultry stews contain dark meat.  Dark meat actually needs a longer cooking time and higher cooking temperature (170-175) vs white meat (160-165). 

    For example, let's say you were baking chicken and stuffing and you brought home a package of chicken breasts and chicken legs.  If you were to bake them up separately the chicken breasts would be done 20-30 min sooner than the legs (assuming the same weight)!

    Most food scientist would suggest in a recipe where you are substituting white meat for dark, to brown your chicken first and get all your little brown bits in the bottom of the pan, remove the protein, then continue to cook the remaining ingredients. Add the chicken back in at the last moment to reheat the meat and serve.IMG_3228

  • IMG_2927 3  soft black bananas sat on my counter early Friday morning waiting to be made into something delicious. I was going on about 4 hours of sleep and don't know what possessed me to make muffins for breakfast, but I went for it. Henry is not a big breakfast eater (he takes after his mother) so I'm always trying to find something new for him to eat before heading off to school. IMG_2918 Here's the recipe:

    Banana Crumb Muffins

    Ingredients:
    1 1/2 cups all-purpose flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 teaspoon salt
    3 bananas, mashed
    3/4 cup white sugar
    1 egg, lightly beaten
    1/3 cup butter, melted
    1/3 cup packed brown sugar
    2 tablespoons all-purpose flour
    1/8 teaspoon ground cinnamon
    1 tablespoon butter
    Directions:
    1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
    2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
    3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
    4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

The kids especially loved them and snacked on them all day and I can officially say that all 10 muffins have been eaten (that's always a good sign, right?)

  • IMG_2892 We hit the thrift shop this morning with Rachel and scored some excellent finds. Kate wanted to wear her's. IMG_2894All of them. Wait I think there's one more under there: IMG_2897 Ah yes, the khaki skirt. One dress is actually missing from this picture. I later found her clinging to it while sitting on the couch. $5 made this girl very happy today. She's starting to really fall in love with dresses which is so fun. She insisted on sleeping in one I brought home last week and and slept snuggled up to the other. I love 2 1/2!

  • IMG_2867 Henry is quickly approaching his "100th Day of School." He has been given the homework assignment of gluing 100 of  'something' onto a large piece of red posterboard. After much contemplation, he's decided to go with 100 jokes. We desperately need YOUR help, blogland! Homework is due on Tuesday- yikes!! Because Henry was out sick last week we are getting a major late start on this so if you could spare a joke, or two, or three- you'd sure make a 5 year old pleased as punch. Once we have all the jokes, we'll print them out & Henry will paste them to the posterboard.

  • BHG 1) This painted wood floor in the Feb. issue of Better Homes and Gardens. Everything about it is perfection. I'm completely in love with the color scheme. I want, I want! Barn-door-11 2) This wood barn door via house*tweaking. I'm absolutely crazy for the yellow and gray and it's such a great solution to close off that bathroom space.

    We spent 3 hours at the dr.'s office today. Sheesh. I was up last night at 2 a.m. with Henry hooked up to a nebulizer and Kate wanting to watch Shrek. So we did. I think we finally fell asleep around 3:45. All 3 children have some kind of ailment.

    All the free time in the waiting room today left Kate contemplating life's serious questions. She asks, "Does the Holy Spirt wear undies or diaps?" So if any of you want to get back to her on that, she's waiting.

  • Simply Aprons Depending on how long you've been reading this blog, you may or may not remember way back when (April of 2008 to be exact) I had one of my apron patterns published in a book called "A is for Aprons". The publishers took 12 patterns from that book and created this new book "Simply Aprons" which features a pattern from yours truly. The book won't be available to ship until March 1st but I received my advance copy on Monday along with an additional copy that I have decided to give away here on ye olde blog. Mine…hmm… Mexican restaurant with friends tomorrow night and I think that's it. Oh I just remembered it's a holiday weekend! We'll have to do something fun on Monday.

    Now- for my other celebrity sighting (this one is for you, Elaine W.) I decided to expand my television watching to incorporate a few more shows. Call it a New Years resolution if you will. Right now I've only got about 4-5 shows in my television rotation. I became oddly intrigued by the show "Hoarders" and set it up on TiVo. That show…yikes! I am here to admit that I am a craft & fabric hoarder. Send in Dr. Zasio stat! I like her;  she reminds me of my old neighbor, Rita, who by the way was an extra in a few "Leave it to Beaver" episodes while in her youth. I digress.

    It was a cold, dark, night (as all stories should begin) and I was at the .99 cent store picking up valentines stuff for Henry's party and lo and behold who do I run into? Dr. Robin Zasio? No- I wish! ….wait for it….AN ACTUAL HOARDER WHO WAS FEATURED ON THE SHOW. What's even more impressive is that it took me about a 1/2 second to realize who this person was. I didn't even have to think about it. No, "hmm..that person looks familiar." And I know you are wondering- the answer is 'no' they were not hoarding stuff from the dollar store.

    IMG_2771 Valentine's have been made and sent off to school with Henry. Kate was feeling very sad that she had no school to take any valentines to so a bunch were taken to her nursery class at church yesterday. Inspiration found here.

    We'll be eating heart shaped pizza for dinner (thanks for the tip, Cheryl) which the kids are thrilled about. Hope your day is filled with lot's of LOVE!
