We had a few friends over this weekend for a bit of a Halloween Dinner if you will. Corn Dogs, Chili, Cornbread, etc., We decided to make our own corn dogs and I am here to say they were fantastic. Did I just say corn dog & fantastic in the same sentence? I did and they were. We used a turkey dog and they actually ended up nice and light (if that's possible.) Here's the recipe- you should try them if you never have. They were really fun for kids & adults alike!
Corn Dogs
1 C yellow cornmeal
1 C flour + 1/2 C
dash of black pepper
1/2 C sugar
4 tsp baking powder
1 egg
1 1/4 C milk
1 quart vegetable oil for frying
(2) 16 oz pkgs of turkey or beef hot dogs (or smart dogs if that's the way you roll)
16 wooden skewers
Combine dry ingredients in a bowl (reserving additional 1/2 C of flour). Wisk in eggs & milk. Pour batter into a tall drinking glass. Set aside. Preheat oil over medium heat. Place additional 1/2 c flour on plate or bowl. Dry hot dogs with paper towels (dogs need to be completly dry or flour/batter won't stick.) Coat dogs with a flour, removing any excess. Place skewer into the entire length of dog. Dip into batter and shake off any excess. Fry, two at a time, for 2-3 minutes. Drain on paper towel.
